“Extreme Cooking”

Donald A La Jacobushka:

This is a product of no snow on the slopes, staying home all day, getting hungry, cooking and deciding to do a photo shoot for no reason at all. A genuine spur of the moment meal for two inspired by some friends from Canada, Denmark, Japan, Russia and random ingredients I found in the cantina.

Its possible that i may have missed a few ingredients/steps as I only cook without recipes. I had to work my way backwords using the photos to figure out what steps I actually took to complete the meal.

Prep + cook time = 1.5 hours

Donald (i.e. the Duck):

-1 Duck Breast (skin on!)
-Salt to taste
-Pepper to taste
-Optional – fennel and rosemary to taste

Citrus Pomegranate Duck Sauce:

-2 tbsp duck fat (yeah use it, its
-2 big glasses of wine ( 1 is for the chef)
-1 knob of butter
-1/3 cup of pomegranate seeds
-1 cup chicken stock
-Salt to taste
-Pepper to taste
-Sugar to taste
-2 – 3tbls of orange marmalade
-4 garlic cloves
-2 shallots
-1/3 cup of double cream

Sugar Dusted Pan Fried Caramalized Potatoes:

-1 pot of boiling water
-5 potatoes peeled
-2 tbsp double “O” (olive oil)
-1 white onion
-5 garlic cloves
-2 shallots
-Paprika to taste ( 1 tsp)
-Salt to taste
-Pepper to taste
-Sugar to taste (1 – 2 tsps)

Gomae (Japanese Spinach Salad)

-1 pot of boiling water
-2 – 3 big bunches of spinach
-1/4 cup of peanut/sesame oil OR 1
tbls of pan roasted sesame seeds OR 1 tbls of tahini sauce
-1/4 cup of soya sauce
-1 tbls sugar or to taste (or mirin)
-cold running tap water
